Vegan Buffalo Cauliflower Sandwich

Ingredients:

-2 Cauliflower heads to make 4 cauliflower steaks

- 3 cups of Panko Breadcrumbs

- 4 whole wheat buns

Batter Ingredients:

  • 1 ½ cup Whole wheat flour

  • 4 tsp garlic power

  • 4 tsp onion powder

  • 2 tsp cumin

  • 2 tsp smoke paprika

  • ½ tsp sea salt

  • ½ tsp ground black pepper

  • ¾ cup of Water

  • ¾ cup non-dairy milk (I used Ripple original unsweetened but almond, soy, cashew, etc. will work)

Jalapeño Lime Coleslaw Ingredients:

  • ½ cup vegan mayonnaise

  • ¼ cup pickled jalapeño slices, drained

  • 1 tbsp lime juice (add additional tbsp if needed)

  • ¼ tsp chili powder

  • ½ tsp sea salt

  • 3 cups shredded or finely chopped cabbage

  • 2 green onions, white and green parts, finely chopped

  • 2 tbsp finely chopped fresh mint

  • 2 tbsp finely chopped fresh cilantro

  • ¼ tsp ground pepper

Ranch Dressing Ingredients:

  • ½ cup vegan mayonnaise

  • ½ tbsp finely chopped fresh dill

  • ½ tbsp finely chopped fresh flat-leaf parsley

  • ½ tbsp finely chopped chives

  • 1 tsp apple cider vinegar

  • ½ tsp onion powder

  • 1⁄8 tsp sea salt

  • 1⁄8 tsp ground pepper

Buffalo Sauce Ingredients:

  • 1 ½ cup buffalo sauce (I used Primal Buffalo sauce)

  • ¼ cup melted butter

Directions:

Pre-heat oven to 450 degrees. Spray a cookie sheet or large casserole dish with cooking spray. I used coconut oil. Take cauliflower heads and cut into two pieces. Slicing the cauliflower from top to bottom. Then cut the inside of the half, 1” thick slice, do this to each half to get four 1” steaks. (one cauliflower only makes 2 steaks if you don’t need 4 then just used half the ingredients for this recipe.) Also, the extra cauliflower left over can be used to make cauliflower wings.

Next measure out all ingredients for batter in a large bowl. Mix ingredients well, then use a rubber spatula to fully coat each cauliflower steaks with the batter on all sides. In a separate bowl pour the breadcrumbs and then transfer cauliflower steaks into breadcrumbs to coat the cauliflower steaks evenly on all sides. Once finish place cauliflower steaks on cookie sheet and cook in oven for 25 minutes, flip the steaks over after 12 minutes then cook for additional 13 minutes to make the total cook time equal 25 minutes.

Remove from oven and measure buffalo hot sauce in a large bowl, melt butter in microwave for 20 seconds then add to buffalo sauce. Mix well. Then dip cauliflower steaks in buffalo sauce, coating each side evenly. Then transfer back to cookie sheet and cook for additional 25 minutes, remember to flip the steaks halfway, 12 minutes first then 13 minutes on the other side. While this is cooking make your coleslaw and ranch dressing. To make the coleslaw measure out the ingredients in a bowl and mix well. Place in refrigerator until cauliflower steaks are done. To make the ranch dressing measure out all ingredients in a bowl and mix well. Place in refrigerator until cauliflower steaks are done cooking.

Once cauliflower steaks are done cooking, generously spread ranch dressing on both halves of your bun, add cauliflower steak, then top with jalapeño lime coleslaw, optional add tomato, onion, and romaine. Enjoy!

Optional: Add tomatoes, romaine, and red onion to sandwich
